廣西福建麵 Guang Xi Hokkien (Prawn) Noodles

歷史悠久并流傳三代的大山腳伯公埕廣西福建麵,名揚海外并吸引大批食客。這檔由老闆易文祥經營多年的廣西福建麵,湯頭香甜,蝦味香濃。湯頭主要材料除了鮮蝦外,還包括豬大骨,江魚仔及冰糖熬煮而成,然後熬煮出滲出古早味及原汁原味的福建麵。

較後,福建湯麵還附上許多配料,包括湯頭的鮮蝦,大蝦,滷雞腳,排骨,雞蛋,豆芽,蕹菜等。滷雞腳是食客的最愛,雞腳被滷得非常入味,且雞腳皮筋有入口即化的感覺。

當這碗廣西福建麵送上桌時,老闆會在湯麵中加一湯匙自製辣椒醬,而食客可隨著嗜辣程度將辣椒醬加入湯麵。

Pek Kong Cheng famous Guang Xi Hokkien (Prawn) Noodles has a long history and attract a large number of diners. The boss Jason Yik has been operating his stall for many years. The broth seem to be sweeter than usual with shrimp fragrant. Main ingredients of the broth in addition to shrimp, includes pig bone, anchovies and boiled rock sugar.

The hokkien (prawn) noodles served with the soup of the shrimp and other ingredients, including, prawns, braised chicken feet (favourite choice of diners), ribs, eggs, bean sprouts, water morning glory and so on. A spoon of homemade chilli oil is served along with the bowl of hokkien (prawn) noodles.

Price: RM5 or RM6 (additional charge)

Business hours: 7:30 am to 11:00 am (Closed on Monday and Tuesday), 7.30pm to 12pm (Closed on Sundays and Mondays)

大山腳白雲吞面 BM White Wan Tan Mee

談起大山腳伯公埕雲吞面,大家腦海裡肯定湧現以豬油提香的白雲吞面。

這檔由老闆何兆添經營數十年的白雲吞面,有別於一般雲吞面,

不強調黑醬油或醬油等調味料,而是採用新鮮豬油提香,然後再以特製滷汁拌面,較清淡的雲吞面吃起來別有另外一番滋味。 手工製作的麵條,咀嚼起來爽口又有口感。簡單麵條再搭配一般配料如雲吞,叉燒及青菜,還有不太油膩的豬油渣。這碗麵可說是清淡中帶有濃郁香味。

白雲吞面端上時,建議您將碗中滷汁,麵條及食材攪拌均勻,然後再搭配醃製醋辣椒,吃起來香味撲鼻,讓人讚不絕口。

Talking about Wan Tan Mee, the Bukit Mertajam White Wan Tan Mee must be all in our mind.

The stall owner (business for decades) makes his own egg noodles that are smooth, supple and has a nice clean bite. The noodles are perfectly complemented by his light and flavourful soup. Instead of dousing it full of soya sauce and dark soya sauce, the noodles are clear and seasoned with a dash of his soup and the slightest splash of sauce (fresh lard). It looks pale, to earn the name, White Wan Tan Mee. But it is definitely big on flavours and texture with general ingredients such as wonton, pork and vegetables. Before you start dig in the bowl of noodles, make sure you give it a good stir.
